This Mediterranean cucumber tomato salad is the perfect, refreshing side. A burst of freshness with a salty bite of kalamata olives.
Last summer, my cucumber plants produced a ton! We were overloaded with cucumbers, and I needed a way to use them all so they didn’t go to waste. I wasn’t quite prepared to learn how to pickle them myself, so I decided to whip up a cucumber heavy salad without lettuce.
Fresh cherry tomatoes thrown on top add a burst of freshness and a beautiful pop of color, and the kalamata olives give it a perfectly, salty bite.
The Best Way to Wash Your Vegetables
I am a stickler for washing all of our fruits and vegetables really well, even if they come out of our own garden. Using just water doesn’t wash things off as well as you would hope, so I opt for a better alternative.
The Thieves Fruit & Veggie Soak is a natural, non-toxic way to clean your fruits and vegetables. You don’t have to worry about any toxic chemicals, and you only need to use a small amount to clean them well. Cleans off germs, waxes, parasites, chemical residue, etc.
I love filling up my farmhouse sink with water and a few capfuls of the Thieves Fruit & Veggie Soak, then throwing in all of my fruits and vegetables for the week at one time to wash. It gets some meal prep out of the way and saves me time. You can also just fill a bowl with water and one capful of the Thieves Fruit & Veggie Soak and do a little bit at a time. I let everything air dry or pat it off gently before putting it in the fridge. Cleaning and removing the moisture helps fruits and vegetables last longer before they go bad.
Another way to wash your fruits and vegetables is with a vinegar soak. Fill a bowl with water and add a splash of vinegar. Put a couple of drops of Lemon essential oil in for good measure.
How to Make Mediterranean Cucumber Tomato Salad
After you wash your cucumbers and tomatoes, it’s time to chop. I always leave the peel on the cucumber, but you could peel it off also if you prefer. Slice the ends off of the cucumber, and then split it in half lengthwise. Then, cut each length in half again and slice to your preferred thickness.
Grab a large bowl if you are making this Mediterranean cucumber tomato salad for a party and throw all of the cucumber in it. If I am making it at home for my family, I just slice and put it on each individual plate.
Next, take your cherry tomatoes and throw them in the large bowl or put a couple on each plate. For myself, I chop my tomatoes in half before putting on my cucumber salad. I don’t like the feeling of biting into a whole tomato…
A topping that is my absolute favorite to put on salads is olives. They give the perfect, salty burst to a bite. For this Mediterranean cucumber tomato salad, I chose to go with kalamata olives because they pair well with the other flavors. If you buy them whole, make sure to double check for pits so you don’t crack a tooth. I like to slice them in half before serving to my kids. You can also buy jars that are pre-sliced. To finish it off, sprinkle a little bit of feta on the top.
Serve with olive oil, balsamic vinegar, salt and pepper. Or to make it even easier, grab a bottle of premade balsamic dressing from the grocery store.
Note: If you are bringing this Mediterranean cucumber tomato salad to a party, leave the dressing off until right before serving. Or keep it on the side so individuals can put their own dressing on.
Mediterranean Cucumber Tomato Salad Ingredients:
- Cucumber
- Cherry tomatoes
- Kalamata olives
- Feta cheese
For vinaigrette:
- Olive oil
- Balsamic vinaigrette
- Salt
- Pepper
Mediterranean Cucumber Tomato Salad Instructions:
- Wash your produce.
- Slice your cucumber into quarters. I leave the peel on, but this is just personal preference.
- For serving at a party, throw all of the ingredients in a large bowl. At home, build the salad on individual plates and add the toppings proportionally.
- Add the cherry tomatoes. You can leave whole or slice in half or quarters.
- Add kalamata olives, either pre-sliced or slice whole ones in half yourselves, making sure there is no pit.
- Sprinkle feta cheese over the top.
- Drizzle with olive oil, balsamic vinegar and salt & pepper.
Note: If you are bringing this Mediterranean cucumber tomato salad to a party, leave the dressing off until right before serving. Or keep it on the side so individuals can put their own dressing on.
To keep it even more simple, you can use a store-bought balsamic dressing.
You might notice that I did not give exact amounts or measurements for any ingredient…that’s because this salad is so easy to throw together for one serving, or multiple servings. For adult portions, I usually plan to use about 1/2-3/4 of a cucumber. Then I add the toppings proportionally.
My kids love this Mediterranean cucumber tomato salad! They eat about half the serving of an adult portion.
How to Store:
Because the water content in cucumbers is very high, this salad doesn’t store well for very long in the fridge. My best recommendation is to chop the cucumber as close to serving time as possible. If it’s impossible to avoid some gap in time between chopping and eating, store the cucumber separate from the other ingredients so that the water can be drained off before serving.
Recipe Variations:
- When I can find them, I love to use the heirloom cherry tomatoes that come in a variety of colors like purple, red and yellow. It adds even more beautiful pops of color!
- Try different types of olives for a slightly different flavor.
- Swap out the feta cheese for fresh mozzarella cheese.
